Use a pumpkin-carving tool to cut a hole in the top of the pumpkin large enough that your hand can fit inside it. This can be tricky, so parents may want to do this part. Depending on the age of your child, you could draw the hole with a washable marker, start the cutting, and let your child finish the hole. When cutting, angle the tool inward (toward the center of the pumpkin) so the lid will fit snugly and won't fall through. Carve a small notch in the lid to let candle smoke out.
Use a large, flat spoon for scooping out the seeds with your child. Kids can also help you separate out the seeds and set them aside to make Toasted Pumpkin Seeds. You may want to scrape away at the inside of the pumpkin wall where you plan to carve the face.
Choose and print a character carving stencil. Cut small slits in the paper so it will lay flat against the pumpkin, and then tape it on. Show your child how to poke a pushpin along the edges of the design, leaving small holes in the pumpkin. Remove the paper, and use the small holes to guide you as you cut into the pumpkin with a small, serrated pumpkin-carving knife.
When cutting out the jack-o'-lantern's features, use a gentle back-and-forth sawing motion, and take your time. It helps to angle the tool inward slightly so you can easily push the pumpkin pieces out from the inside of the pumpkin with your fingers. Immediately after carving, rub all the cut edges with petroleum jelly to help extend the life of your pumpkin.
To light up your pumpkin, use a votive candle in a holder (which is safer than a tapered candle), a mini-flashlight, or glow sticks.
