Chicken Quesadillas

These simple quesadillas can be filled with nearly any cooked meat, and vegetables or black beans can be used instead of meat for a vegetarian treat. Using leftovers, you can make an easy meal in minutes!



Ingredients
1/2 cup cooked chicken, diced small
1/2 cup mild salsa
1/4 cup corn kernels, fresh or frozen
1/2 tsp. ground cumin
4 six-in. flour tortillas
Olive oil and chili powder
1/2 cup grated cheese (such as mozzarella, Monterey Jack, Mexican white cheese, or mild cheddar)



Start Cooking

Step 1
Preheat the oven to 450°F.



Step 2
In a small mixing bowl, combine the chicken, salsa, corn, and cumin.



Step 3
Put on two tortillas on an ungreased baking sheet. Spread the chicken mixture evenly over each tortilla and sprinkle the cheese over the chicken mixture. Top with a second tortilla and press down slightly.



Step 4
Brush the top of the tortillas with olive oil and sprinkle with a pinch of chili powder.



Step 5
After the quesadillas have cooled slightly, cut into wedges and serve hot.
