Red, White, & Blueberry Shortcakes

Ingredients
2 cups baking mix (such as Bisquick)
2/3 cup milk
Flour for dusting and rolling
1 pint whipping cream, flavored with 2 tbsp. confectioners’ sugar and 1 tsp. vanilla extract
1/4 cup sugar, divided
1 pint strawberries, sliced
1 pint blueberries
Fresh mint leaves



Start Cooking

Step 1
Heat oven to 450°F. In a medium bowl, blend baking mix and milk with a fork. The batter will be a little bit lumpy.



Step 2
Roll out the dough on a lightly floured board or counter to 1/2-inch thickness. With a floured 2-inch-round cutter, cut eight biscuits. Place on a greased baking sheet 2 inches apart.



Step 3
Brush the tops with 2 tablespoons of the flavored cream. Sprinkle with 1 tablespoon of sugar. Bake 10 to 15 minutes, or until golden brown. Remove from the oven and cool 5 minutes.



Step 4
Meanwhile, place the berries in a bowl and sprinkle with the remaining sugar. Whip the flavored cream with an electric mixer or by hand.



Step 5
Slice the biscuits horizontally. Top bottoms with approximately 2 tablespoons each of the berries and whipped cream.



Step 6
Replace the biscuit tops and layer more berries and cream on top. Garnish with the fresh mint and serve.
