Ingredients
2 cans (16 oz. each) vanilla frosting
Green, blue, and purple paste food coloring
24 chocolate-covered cookie cakes or marshmallow cookies (SnackWells® or Mallomars®)
24 unfrosted cupcakes
24 large yellow gum drops
2 strands red licorice laces
48 mini chocolate chips
6 yellow fruit chews (Starburst®), quartered
1 tube each red and black decorating frosting



Start Cooking

Step 1
Tint one can of the vanilla frosting green. Spoon 1 cup of the green frosting into a pastry bag fitted with a small star tip; set aside. Spoon 1/4 cup of the remaining frosting into a resealable bag; set aside. Tint the remaining frosting a dark blue/purple with the food colors.



Step 2
Place the cookies on a wire rack placed over a wax-paper-lined sheet pan. Heat the blue frosting in a microwave-proof measuring cup for 5 seconds, or until the texture of slightly whipped cream. (Do not overheat!) Pour the frosting over the cookies to cover completely. Reheat the excess if necessary. Reserve several tablespoons for the cap. Let the cookies dry for about 30 minutes.



Step 3
Meanwhile, frost the tops of the cupcakes with the green frosting. Transfer the cookies to the center of each cupcake. Pipe several patches of "grass" with the frosting in the pastry bag with the star tip.



Step 4
Trim the gum drops and press at the top of the cookie to make Pablo's hat. Brush some of the reserved blue frosting on top. Attach small pieces of red licorice on top of the hat. Pipe dots of white frosting for the eyes and attach the mini chocolate chips, flat-side up. Add a small dot of vanilla frosting onto the chocolate chips. Mold the fruit chew into a small diamond shape. Attach as his beak and pipe a dot of red in the center. Add eyebrows with the black frosting. Continue with the remaining cupcakes and ingredients.
