Max and Ruby Cupcakes


Servings: Makes 12 cupcakes

For this recipe you'll need to make beforehand Basic Vanilla Cupcakes or Simple Chocolate Cupcakes. To decorate these cupcakes, you'll need the Max and Ruby Cupcakes Template, white-chocolate melting wafers, and decorating sugar, which are available at baking-supply stores. Be sure cupcakes have cooled before decorating.



Ingredients
1 1/2 cups white-chocolate melting wafers
2 tbsp. pink decorating sugar
1/2 cup dark chocolate frosting
1 can (16 oz.) prepared vanilla frosting
1/2 cup mixed colored sprinkles



Start Cooking

Step 1
Line two cookie sheets with wax paper and place the Max and Ruby Cupcakes template under the wax paper.



Step 2
Melt the chocolate wafers in a medium glass bowl in the microwave until smooth, about one to two minutes, stirring frequently. Spoon the melted chocolate into a resealable bag. Snip a small corner from the bag, pipe the outlines, and fill them in with chocolate. Repeat to make 12. Place the cookie sheets in the refrigerator for about five minutes or until the chocolate has set.



Step 3
Remove the cookie sheet from the fridge and pipe small squiggles at the base of the ears. (Reheat the chocolate, if necessary.) Sprinkle with the pink sugar. Refrigerate until set and then shake off the excess sugar.



Step 4
Spoon the dark chocolate frosting into a resealable bag and snip off a small corner. Pipe the outline and facial features freehand onto the cooled white chocolate.



Step 5
Frost the tops of the cupcakes with vanilla frosting. Place the sprinkles on a flat plate and roll the edges of the cupcake to coat. Peel the chocolate faces from the wax paper and carefully place them on top of each cupcake.



Step 6
Refrigerate until ready to serve.
