Melt the chocolate in a microwave safe bowl, stirring frequently, until smooth, about 1 minute.

Add the pumpkin seeds and stir until evenly coated with the chocolate. Drop generous tablespoons of the chocolate mixture, about 1 inch apart on the prepared cookie sheets. Place cookie sheets in the refrigerator until chocolate is set, about 10 minutes. Peel the chocolates from the wax paper and place in airtight containers until ready to serve.
