Ingredients

  • 1 large Mexican avocado (or 2-3 Hass avocados)
  • 1 large beefsteak tomato
  • 1 lime
  • 2 sprigs cilantro
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions

  1. Step 1

    Cut the avocado in half and remove and set aside the pit. Use a spoon to scoop the flesh from the shell. Cut into large slices with a plastic knife and set aside.

  2. Step 2

    Slice the tomato into thick slices, chop up avocados and tomato slices, and have your child help you arrange them on a plate.

  3. Step 3

    Let your child roll the lime on the counter to release the juices. Cut the lime in half and show her how to squeeze the lime over the plate of avocado and tomato, using her hand to catch any seeds.

  4. Step 4

    Sprinkle the plate with olive oil and salt and pepper. Show your child how to tear the cilantro into small pieces and add to the avocado and tomato plate.

  5. Step 5

    Place in the refrigerator until ready to eat.
