Use the rim of a round glass to shape the bread and cheese slices into circular pieces. Cut a piece of bread crust into two 3/4-inch rectangles for the eyebrows. Cut the black olive into two 1/8-inch circles. Cut the red pepper into the mouth and tongue shape. Spoon the cream cheese into a plastic resealable bag. Snip a small corner from the bag.
Spread the mustard or mayo in a thin layer on top of the bread and place on a plate. Arrange the cheese slices, using the photo as a guide, to make Mr. Grouper. Add the orange cheddar fins on either side of sandwich. Pipe 2 ovals as the eyes with the cream cheese. Add the black olive pupils, next add the red pepper mouth. Add the green lettuce as seaweed.
