Blue's Thankful Sweet Potato Treat

Serve up a sweet potato side dish that's full of festive kid-friendly flavor. Topped with ginger cookies and a sprinkle of brown sugar, your kids will be sure to ask for seconds.

Ingredients

• 2 lb. sweet potatoes, peeled, cooked, and mashed
• 6 tbsp. butter or margarine, melted, divided in two
• 1/4 cup orange juice
• 1 1/2 tsp. salt
• 12 ginger cookies, finely crushed
• 1/2 cup chopped pecans
• 3 tbsp. brown sugar

Directions

1. Step 1

   Preheat oven to 350°F. Mix potatoes, 3 tablespoons of the melted butter, orange juice, and salt until well blended. Spoon into a 2-quart casserole.

2. Step 2

   Mix the remaining 3 tablespoons of the melted butter, cookie crumbs, pecans, and brown sugar until blended. Sprinkle over the sweet-potato mixture.

3. Step 3

   Bake 30 minutes or until topping is golden brown.
