Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 stick butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 3 bananas mashed, about 1 1/4 cups
  • 1/4 cup orange juice
  • 1 1/2 cups vanilla frosting
  • Neon pink, purple and blue food coloring (McCormick)
  • 1 tube black decorating frosting
  • 8 brown mini candy coated chocolates (M&M’s Minis)

Directions

  1. Step 1

    Preheat oven to 350°F. Grease and line four mini loaf pans (3 x 5 inch) with wax paper.

  2. Step 2

    Combine the flour, baking powder, baking soda, and salt in a medium bowl. Whisk to blend.

  3. Step 3

    Beat the butter and sugar in a large bowl until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition until well blended. Stir the mashed bananas and orange juice.

  4. Step 4

    Add the flour mixture, alternating with the banana mixture--starting and ending with the flour mixture--and beat until just blended. Divide the batter evenly between the prepared loaf pans.

  5. Step 5

    Bake until loaves are golden and a toothpick inserted in the center comes out clean, 35 to 40 minutes. Transfer the loaves to a wire rack and cool for 10 minutes. Invert and cool completely.

  6. Step 6

    Spoon 2 tablespoons of vanilla frosting into a plastic resealable bag. Tint 3 tablespoons of the frosting pink with the food coloring and spoon into a plastic resealable bag. Divide the remaining vanilla frosting between 2 bowls, tint one a pale purple and the other bowl of frosting a pinkish purple. Spoon each color into separate plastic resealable bags.

  7. Step 7

    Snip a small, 1/8-inch corner from each of the bags with frosting. Using the photo as a guide, pipe Boots' face with frosting and make smooth. Pipe white dots of frosting for the eyes and add the brown candies as the pupils. Pipe the inside of his ears and mouth with the pink frosting. Pipe nostrils with black decorating frosting.
