Ingredients

  • 1 tbsp. olive oil
  • 1 small green bell pepper, cored, seeded and chopped
  • 5 large eggs
  • 2 tbsp. milk
  • Salt and pepper
  • 4 slices ham, chopped
  • 4 hot dog rolls, top sliced

Directions

  1. Step 1

    Heat the olive oil in a medium skillet over medium heat. Add the green pepper and cook, stirring occasionally, until tender, about 3 minutes.

  2. Step 2

    Break the eggs into a medium bowl. Add the milk and beat with a fork. Season with salt and pepper. Pour the eggs into the skillet and cook, stirring occasionally, until the eggs are almost set. Sprinkle the chopped ham over the mixture and stir until the eggs are cooked through, about 4 minutes total.

  3. Step 3

    Spoon the egg mixture evenly among the hot dog rolls. Wrap in a napkin and you are ready to go!
