Make a healthy treat with sorbet, Mandarin orange slices, and chocolate chips.

Scoop the sorbet into four balls (about 3 inch rounds) with an ice cream scoop and transfer to small serving dishes. The sorbet balls may be scooped in advance, placed on a cookie sheet and returned to the freezer until ready to serve.
Using the photo as a guide, arrange some of the drained Mandarins, pointed ends out, along the outside of the sorbet balls to look like the 'rays' of the sun. Press two chocolate chips, pointed end down, into the sorbet for the eyes. Pipe a smile with the chocolate decorating frosting below the eyes. Serve immediately.
