Ingredients

  • 1 tbsp. olive oil
  • Salt and freshly ground pepper
  • 6 chicken drumsticks
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 1 small green pepper, chopped
  • 1 clove garlic, minced
  • 1/2 tsp. dried thyme
  • 2 tbsp. flour
  • 3 cups chicken broth
  • 2 cups whole frozen okra
  • Hot pepper sauce (optional)

Directions

  1. Step 1

    Heat the oil in a large Dutch oven over medium-high heat. Season the chicken with salt and pepper. Brown the chicken in the pan, turning occasionally until golden brown all over, about 6 to 7 minutes.

  2. Step 2

    Add the onion, celery, pepper, and garlic. Reduce heat and cook and stir until the vegetables are tender. Add the thyme and the flour and cook for 3 minutes longer.

  3. Step 3

    Add the chicken broth and okra and bring to a boil over medium heat. Cover and simmer until the chicken is tender, about 25 minutes longer. Season to taste, and serve with hot sauce if desired.
