Ingredients

  • 1 tbsp.olive oil
  • 1 garlic clove, minced
  • 4 cups frozen green peas
  • 2 tbsp. chopped fresh spearmint
  • 1 tbsp. lemon zest
  • 1/4 tsp. salt
  • Dash of freshly ground pepper

Directions

  1. Step 1

    In a medium skillet, heat olive oil over medium heat. Add garlic and sauté for 2 minutes, stirring continuously so garlic does not burn.

  2. Step 2

    Add peas and cook for 2 more minutes, stirring often. Turn off heat.

  3. Step 3

    Put garlic and peas into a medium bowl. Add mint, lemon zest, salt and pepper. Stir to combine. Serve warm.

  4. Alternate serving options

    Instead of using spearmint, you can try substituting in other herbs from the mint family including peppermint, ginger mint, apple mint, basil, lavender, marjoram, oregano or thyme.
