Servings: 36

Prep Time: 40 min.

Ingredients

  • 1 1/2 cups old-fashioned oats
  • 1 cup puffed rice cereal
  • 1 cup dark raisins
  • 1/2 cup wheat germ
  • 1/2 cup finely chopped dried apricots
  • 2 tbsp. sesame seeds
  • 1/2 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup honey
  • 1/2 cup white chocolate chips
  • 1/4 cup butter
Tip: For this recipe, you can use quick-cooking oats, but not instant oatmeal.

Directions

  1. Step 1

Line a 9-inch-square baking pan with foil. Grease with vegetable cooking spray and set aside.

  2. Step 2

Mix the oats, puffed rice, raisins, wheat germ, apricots, and sesame seeds in a large bowl until well combined.

  3. Step 3

In a medium saucepan, combine the brown sugar, light corn syrup, and honey. Bring mixture to a boil over medium heat, stirring, and boil for 1 full minute.

  4. Step 4

Remove from heat and stir into the chocolate chips and the butter, stirring until smooth. Carefully pour the hot mixture over the oat mixture and stir with a spoon until evenly coated. Transfer mixture to the prepared pan. Spread the mixture to an even layer. Let cool completely. When cool, invert onto a cutting board and cut into 1 1/2-inch pieces. Wrap the pieces in wax paper. Keep candies in an airtight container for up to 3 weeks.

Tip: To spread the mixture to an even layer, try using a hard plastic spatula or wooden spoon coated with butter or margarine.
