Beat the egg in a medium bowl until well combined. Place the bread crumbs in a shallow bowl or pie plate. Season the chicken tenders with salt and pepper.
Dip the chicken tenders in the beaten egg and coat completely. Transfer one tender at a time to the bread crumbs. Roll the chicken in the bread crumbs to cover completely. Place the coated chicken on a cutting board until ready to cook. Tenders may be made to this point up two hours in advance and covered in the refrigerator.
Heat the oil in a large nonstick skillet over medium heat. Add all of the tenders to the hot pan. Cook the tenders, turning once, until golden and cooked through, about 6 to 8 minutes. Transfer the tenders to a paper-towel-lined plate. Press the almond slices to one end of the tender to look like a nail. Tenders may be eaten warm or cold.
Arrange some lettuce in a small container. Place the dino egg and cherry tomatoes on top. Add some grapes and two chicken fingers.

Place the eggs in a small saucepan and add enough water to completely cover the tops of the eggs. Bring the water just to a simmer over medium heat. Remove from heat and cover the saucepan. Let stand covered for 20 minutes.
Drain the water and rinse the eggs until cool enough to handle. Lightly crack the eggshells all over--do not peel the egg shells. Place the eggs in a medium bowl. Pour the beet juice over the eggs, adding enough water to just cover. Place the eggs in the refrigerator overnight.
Arrange the lettuce on serving plates to look like a nest. Peel the eggs and place an egg or two in each nest.
