Preheat the oven to 350°F. Line several cookie sheets with parchment paper and set aside.
Knead the cookie dough with the flour on a work surface until smooth. Roll out part of the dough on a lightly floured surface to a scant 1/4-inch thickness. Using the templates cut out as many dinosaur shapes as possible. Transfer the cut-outs to the prepared cookie sheets about 2 inches apart. Repeat with the remaining dough and the scraps.
Bake the cookies until lightly golden, about 10 to 12 minutes. Transfer to a wire rack and cool completely.
When the cookies are cool spread some of the decorating gel on top of the cookie in a thin layer. Use another color on top for the stripes or dots. Use the black gel for the eyes.
