Dora Pancakes

Ingredients

  • 1 cup dark chocolate candy melts (Wilton)
  • 2 tbsp. cream cheese, softened
  • 1 roll red fruit leather
  • 1 cup pancake mix
  • 1/3 cup milk
  • 1 large egg
  • 2 tsp. vegetable oil
  • 12 fresh blueberries

Directions

  1. Step 1

    Arrange the hair template on a cookie sheet and cover with wax paper. Place the candy melts in a plastic resealable bag bag. Microwave the candy melts, massaging the bag every 5 seconds, until the candy is melted and smooth, about 1 minute. Press out the excess air and seal the bag.

  2. Step 2

    Snip a small corner, 1/8 inch, from the bag. Pipe an outline of the hair and fill in with more melted candy. Continue to make 6 hair pieces. Transfer the cookie sheet to the refrigerator until set, about 5 min. The chocolate hair can be made up to 1 week in advance and kept in an airtight container in a cool place.

  3. Step 3

    Spoon the cream cheese into a plastic resealable bag bag. Cut the fruit leather into 6 mouths about 1-1/2 inches long.

  4. Step 4

    Combine the pancake mix, milk and egg in a medium bowl. Whisk until the mixture is almost smooth.

  5. Step 5

    Heat a flat skillet over medium heat. Add 1 teaspoon of the vegetable oil. When the pan is hot, spoon a scant 1/4 cup of batter onto the skillet about 2 inches apart. Cook until the top is bubbly and edges are golden, 1-2 minutes. Flip over pancake and continue cooking until set, about 1 minute longer. Transfer pancakes to a platter and top with a clean towel to keep warm. Repeat with the remaining batter.

  6. Step 6

    Arrange a warm pancake on a plate. Snip a small corner from the bag with the cream cheese. Pipe the cream cheese as the eyes and add the blueberries as the pupils. Add the fruit leather mouth and dot of chocolate as the nose. Carefully peel the chocolate hair from the wax paper and place atop the pancake.

Tip: Instead of using templates to form Dora's hair, you can also use chocolate frosting or syrup to 'draw' Dora's hair directly on the pancake.
