Cut the white bread and the bologna into kidney-shaped slices. Cut and shape the pumpernickel bread into Dora’s hair.
Cut the bologna scraps into two 3/4-inch circles. Cut the egg slices into two 1 inch circles. Trim a 1/8-inch edge from each egg slice. Cut the black olive into two 1/4-inch circles. Cut two small pieces of the olive for Dora’s nose and chin from the olive scraps. Cut the tomato slice into a 2-inch semicircle for Dora’s mouth.
Spread the mayonnaise or mustard on each slice of bread. Place the white bread slice on a serving plate, mayonnaise or mustard side up, and add the two slices of bologna. Add the pumpernickel slice, mayonnaise side down, on top of the bologna, to form Dora's hair. Arrange the cut egg, olive and tomato for Dora’s eyes, nose, and mouth.
