Servings: 1

Prep Time: 8 min.

Ingredients

  • 1/2 cup curly lettuce, frisée or green leaf
  • 1 hard-boiled egg, peeled
  • 1 radish
  • 1 piece orange bell pepper or carrot slice
  • 1 black olive
  • 1 sprig dill
  • 1 tsp. mayonnaise (optional)

Directions

  1. Step 1

Place the lettuce on a small plate.

  2. Step 2

Cut the hard-boiled egg in half lengthwise. Cut one half in half again lengthwise to make the ears. Arrange the cut half, cut side down on the bed of lettuce greens. Place the smaller pieces of egg, as the ears, on either side of the egg half near the narrow end, yolk side up.

  3. Step 3

Cut a slice of radish and trim into a 1/2-inch triangle to make the nose. Place the radish nose, red side up, in the center of the egg half. Place two small dill sprigs near the radish nose as the whiskers.

  4. Step 4

Cut two small rounds from the black olive as the eyes and place above the nose. Cut the orange pepper as a bow and place at the base of the egg as the bow tie.

  5. Step 5

Serve with a dollop of mayonnaise or salad dressing if desired.
