Ingredients

  • 1 tbsp. red wine vinegar
  • 1 tbsp. low-sodium soy sauce
  • 1 clove garlic, minced
  • 1 tbsp. sesame oil
  • 1/4 cup vegetable oil
  • 1 tsp. salt
  • 4 cups small broccoli florets
  • 1 large carrot, peeled and cut into thin sticks
  • Salt and pepper to taste

Directions

  1. Step 1

    For the dressing, whisk together the vinegar, soy sauce, and minced garlic in a small bowl. Slowly whisk in the oils until blended. Makes about 1/2 cup dressing. Set aside until ready to use.

  2. Step 2

    Bring a large pot of water to a boil. Add 1 teaspoon of salt to the water. When boiling add the broccoli florets. Return to the boil and cook about 1 minute. Transfer the broccoli to a bowl and rinse under cold water to stop cooking and the broccoli is cool.

  3. Step 3

    Toss the broccoli with the carrots and dressing. Season to taste with salt and pepper. Makes about 4 cups of slaw.
