Ingredients

  • 1 tbsp. hoisin sauce
  • 1 tbsp. soy sauce
  • 2 tbsp. oyster sauce
  • 2 tbsp. water
  • 1 tsp. sesame oil
  • 1 tsp. sugar
  • 2 tsp. cornstarch
  • 1 head iceberg lettuce
  • 1 package firm tofu cut into 1/2 inch cubes
  • 1 can (8 oz.) drained chopped water chestnuts
  • 2 tbsp. canola oil
  • 2 scallions, sliced
  • 1 garlic clove, minced
  • 1 bag (16 oz.) assorted broccoli, carrot and red cabbage, shredded
  • 1 tsp. freshly grated ginger
  • Assortment of store-bought dipping sauces (optional)
Tip: You may want to discard the first few layers of lettuce to get to the crunchier pieces underneath.

Directions

  1. Step 1

    To make the cooking sauce, combine the first 7 ingredients (hoisin sauce through cornstarch) in a small bowl. Mix and set aside.

  2. Step 2

    Heat skillet with oil and saute garlic, scallions, tofu, and ginger for 1-2 minutes.

  3. Step 3

    Add water chestnuts and half of the assorted veggies and toss with the cooking sauce.

  4. Step 4

    Cook for 1-2 minutes while tossing.

  5. Step 5

    Remove skillet from heat and as it cools, prep lettuce leaves.

  6. Step 6

    Cut 1/3 of head off from stem side of lettuce and carefully peel away whole leaves. Submerge and rinse in cold water. Drain in colander.

  7. Step 7

    Place lettuce leaves on a platter and, with a large tablespoon, serve with veggie mix from a bowl. Lay the lettuce leaves on individual plates and place one heaping spoonful in center. Fold long sides into center and then fold short sides in. Serve with store-bought dipping sauces (optional).

Tip: Let kids taste each of the raw vegetables before you cook them. They will be crunchy and fun to eat!
