Try this sweet, but healthy, treat made from the Lychee fruit, a Chinese favorite. Rich in vitamin C, the Lychee makes for a guilt-free party treat or everyday snack.

Spray an 8-inch-square baking pan with cooking spray.
Place the lychee fruit in a work bowl of a food processor and process until a smooth purée.
Meanwhile, place the water in a medium saucepan. Sprinkle the gelatin over the water and let stand for about 5 minutes. Add 1 1/2 cups of the sugar. Heat the gelatin mixture over medium heat until sugar is dissolved. Bring to a boil and simmer, stirring frequently, for about 5 minutes. Remove from the heat. Add the lychee purée and lemon juice. Pour the mixture into the prepared pan and cool.
Cover and refrigerate until set, about 3 hours. To unmold, dip the bottom of the pan in a bowl of hot water and invert. Cut into 8 strips and cut each strip into 4 pieces. Roll the rectangles in the extra sugar to cover right before serving.
