Max & Ruby Egg Salad Sandwich

Ingredients

  • 2 hard-boiled eggs, peeled
  • 2 slices favorite bread
  • 2 tbsp. plain yogurt
  • 2 tsp. mayonnaise
  • 1/2 tsp. Dijon mustard
  • 1 scallion, sliced thin
  • 2 tsp. minced dill (optional)
  • 2 leafy lettuce leaves
  • 2 small radish rounds
  • Black olives
  • Black pepper, to taste

Directions

  1. Step 1

    Chop the eggs and place in a bowl. Add the yogurt, mayonnaise, mustard, scallion and dill. Stir until well combined. Season to taste with freshly ground pepper.

  2. Step 2

    Using the photo as a guide or the template, shape the bunny ears and face from the bread slices.

  3. Step 3

    Spoon the egg salad down the center. Add a sprig of dill, if desired. Using the photo as a guide, cut the radish rounds in half and add to the ears. Cut the olives and add as the eyes. Lastly, use an edible food marker to add whiskers.
