Ingredients

  • 1 large acorn squash
  • 1 tbsp. butter
  • Salt and freshly ground black pepper
  • 1 slice pumpernickel bread
  • 1 hardboiled egg
  • 2 black olives

Directions

  1. Step 1

    Cut the acorn squash in half and scoop out the seeds. Place the squash, cut side down, in a glass pie plate with 1/4 cup of water.

  2. Step 2

    Microwave on high until the squash is tender, about 7 to 10 minutes. Transfer the pie plate to a wire rack and let stand, about 10 minutes.

  3. Step 3

    Scoop out the cooked squash and discard the skin. Place the squash in a bowl. Add butter, salt and freshly ground pepper. Mash together.

  4. Step 4

    Using the template as a guide, shape the squash on a microwave proof platter to look like Moose.

  5. Step 5

    Using a small knife, cut out Moose's antlers and mouth from the pumpernickel bread. Slice the cooked egg and use two of the same sized egg slices to make Moose's eyes. Cut the ends from the black olives for Moose's pupils. Use the black olive scraps to cut small pieces for his nostrils.

  6. Step 6

    Before serving, place a sheet of wax paper over the squash. Reheat in the microwave until hot, about 1 minute. Arrange the bread pieces and egg and olive pieces for the antlers, mouth, and eyes on top of the squash. Enjoy!
