Servings: 16

Prep Time: 60 min.

Cook Time: 25-30 min.

Ingredients

  • 1 box (18.25 ounces) yellow cake mix
  • 1 cup buttermilk
  • 4 large eggs
  • 1/3 cup vegetable oil
  • 1 cup white chocolate chips
  • 2 cans (16 ounces each) vanilla frosting
  • Yellow food coloring
  • 1/4 cup chocolate frosting
  • 2 Jr. mints

Supplies

  • Moose Cake Template

Directions

  1. Step 1

Preheat oven to 350°F. Grease and flour a 9 by 13 inch cake pan. Combine the cake mix, buttermilk, eggs and oil in a large bowl. Beat with an electric mixer on low speed for 30 seconds to combine. Increase speed to medium high and beat 2 minutes longer. Pour batter into the prepared cake pan. Bake until golden and a toothpick inserted in center comes out clean; 25 to 30 minutes. Transfer to a wire rack and cool completely.

  2. Step 2

Take the Moose Cake template, place the antler template onto a sheet pan, and cover with a sheet of wax paper. Place the white chocolate chips into a small bowl and microwave until smooth, about 1 minute. Spoon the melted chocolate into a 1 quart freezer weight resealable bag. Snip a very small corner, about 1/8 inch, from the bag with the chocolate. Pipe outline of antlers and fill with with more chocolate. Tap sheet pan to make tops smooth. Place pan in refrigerator until set, about 5 minutes.

  3. Step 3

Tint 1 cup of the vanilla frosting yellow with the food coloring. Reserve 2 cups of the remaining vanilla frosting to pipe the bandages.

  4. Step 4

Place the Moose body template on top of the cake and cut out Moose's shape with a small paring knife. Cut two 1 by 2 inch rectangles of cake from the scraps. Transfer cake to a serving platter. Arrange the 2 cake pieces where the antlers will be. Frost sides of cake with vanilla frosting. Spread some areas of the cake with the yellow frosting; eyes, hands, mouth. Spoon some of the reserved 2 cups frosting into a pastry bag fitted with a ribbon tip. Pipe lines of frosting to look like bandages all over the cake. Frost 1 1/2 inch rounds for vanilla frosting as the eyes. Add the chocolate candies for the pupils. Pipe a chocolate mouth. Arrange the white chocolate antlers resting on the cake pieces. Pipe with more vanilla frosting bandages.
