No-Bake Cherry Cheesecake Bites

Made with cream cheese, graham crackers, pie filling, and more, these tarts will delight the whole family.

Ingredients

• 1/3 cup fresh lemon juice
• 1 package (.25 oz.) unflavored gelatin
• 16 oz. cream cheese, softened
• 1 cup sugar
• 1/3 cup sour cream
• 1/4 tsp. almond extract
• 36 graham cracker stick cookies
• 1 can (18 oz.) cherry pie filling

Supplies

• Mini-muffin pans
• 36 Mini-muffin paper liners
• Ramekin

Directions

1. Step 1

   Line 36 mini-muffin cups with mini-muffin paper liners.

2. Step 2

   Place the lemon juice in a ramekin (baking dish). Sprinkle the gelatin over the lemon juice and let stand for 5 minutes.

3. Step 3

   Beat the cream cheese in a large bowl with an electric mixer, until smooth. Add the sugar and continue beating. Heat the lemon juice in the microwave until the gelatin is dissolved, about 30 seconds. Pour over the cream cheese mixture and stir well to blend. Fold in the sour cream and the almond extract.

4. Step 4

   Spoon the mixture into the paper liners. Cover top lightly with plastic wrap and refrigerate until set, about 3 hours.

5. Step 5

   Just before serving, kids can insert a graham cracker stick into the center of each cheesecake bite. Add some cherry filling on top.
