Ingredients

  • 1 jar (8 oz.) roasted red pepers, drained
  • 1/2 cup canned chickpeas, drained
  • 1 small clove garlic
  • 3 tbsp. olive oil
  • Salt and pepper
  • 2 tsp. lemon juice
  • Sliced jicama cut into small hearts with a cookie cutter
  • Cucumber sticks
  • Sliced bread, toasted and cut into assorted shapes
  • Carrot circles

Supplies

  • Small cookie cutters in assorted shapes (optional)

Directions

  1. Step 1

    In the bowl of a food processor, combine the red peppers, chick peas, and garlic. Pulse until finely chopped. With the motor running, drizzle the olive oil into the food processor and run until mixture is smooth. Season to taste with salt and pepper and add the lemon juice to taste.

  2. Step 2

    Serve with vegetable shapes and toast pieces.
