PB & Blueberry Sandwich

Ready for a change from PB&J--but not too big a change? Try substituting fruit spread with real fruit. We chose blueberries, but you can slice up most any favorite fruit. Or, even better, try some sliced fruit combinations!

Ingredients

10-15 blueberries
6 whole-wheat English muffins
2 tbsp. peanut butter

Tip: If you have a whole gang over, a pint of blueberries should be enough for 6 sandwiches.

Directions

Step 1
Wash blueberries and place on a paper towel to dry. Set aside.
Step 2
Toast English muffins in a toaster or toaster oven.
Step 3
Spread 1 half of an English muffin with 2 tablespoons peanut butter. Have your child help top with enough blueberries to cover the English muffin. Place other half on top.

Tip: Raspberries, sliced strawberries, and sliced bananas make yummy toppings, too. Or, try a combination!
