Line a 10- by 15-inch jelly roll pan with foil. Spray the foil with vegetable cooking spray; set aside.
Combine the sugar, light corn syrup, water, and salt in a 3-quart heavy bottom saucepan. Bring to a boil, stirring occasionally, over medium high heat. Once the mixture begins to boil, stop stirring. Boil until the mixture reaches 300°F on a candy thermometer. Add the peanuts and cook, stirring, until mixture is golden brown. Remove from the heat and add the butter and baking soda. Pour the mixture onto the prepared pan and spread as thinly as possible. Allow to cool.
