Pizza Bites

Invite kids to help "decorate" their own mini-pizzas with assorted toppings. Make two per child as a yummy lunch or just one as a nourishing snack.

Ingredients

• 1/2 Pizza Dough Recipe
• 1 tbsp. olive oil
• 1 cup prepared pizza sauce
• 1 cup blanched broccoli spears
• 1 cup sliced cooked Italian sausage
• 1/4 cup sliced mushrooms
• 1 cup grated mozzarella cheese

Supplies

• One or two cookie sheets
• Aluminum foil
• 3-inch rounch cookie cutter

Directions

1. Step 1

   Preheat oven to 400°F. Line a cookie sheet with foil; set aside.

2. Step 2

   Kids can help roll or press the dough to 1/2 inch thickness. Show them how to use the cookie cutter to cut out rounds of dough. You should be able to make about 16 pizza bites. Transfer rounds to the prepared cookie sheet.

3. Step 3

   Kids can help brush the tops of the pizzas with the olive oil and prick them with a fork. Place the pizzas in the oven and bake until slightly golden, about 4 minutes. Remove from oven and spoon some sauce on top of each round. Arrange desired topping over sauce and sprinkle with cheese.

4. Step 4

   Carefully return the mini pizzas to the oven and bake until the cheese has melted and the sauce is bubbly, 4 to 5 minutes longer.
