Preheat oven to 400°F. Line a cookie sheet with foil; set aside.
Kids can help roll or press the dough to 1/2 inch thickness. Show them how to use the cookie cutter to cut out rounds of dough. You should be able to make about 16 pizza bites. Transfer rounds to the prepared cookie sheet.
Kids can help brush the tops of the pizzas with the olive oil and prick them with a fork. Place the pizzas in the oven and bake until slightly golden, about 4 minutes. Remove from oven and spoon some sauce on top of each round. Arrange desired topping over sauce and sprinkle with cheese.
Carefully return the mini pizzas to the oven and bake until the cheese has melted and the sauce is bubbly, 4 to 5 minutes longer.
