Bring a large pot of water to a boil over high heat. Add carrots and cook until tender but still somewhat firm, about 4-5 minutes. Drain.
In a large skillet, melt butter and honey over low heat. Stir to help dissolve the honey. Add ginger, salt and pepper and carrots and cook over medium-high heat until heated through and shiny, about 3 minutes. Remove from heat.
Place carrots in a large bowl. Add lemon zest and juice. Toss to combine and serve warm.
