A "peeking" dollop of strawberry jam makes a heart-warming centerpiece to a delicious sandwich cookie.

Preheat the oven to 375°F. Line the cookie sheets with parchment paper; set aside.
Combine the flour, baking powder, and salt in a medium bowl. Whisk to blend.
Beat the butter and sugar in a medium bowl until light and fluffy, about 3 minutes. Add the egg and vanilla and beat well. Gradually add the flour mixture and beat until just blended. Transfer the dough to a piece of wax paper and shape into a disk. Cover and place in the refrigerator until well chilled, about 3 hours.
Divide the dough in half. On a lightly floured work surface, roll out the dough, adding more flour if necessary, to a scant 1/4-inch thickness. Use a 2 1/2-inch heart-shaped cookie cutter to cut out shapes. Transfer the shapes to the prepared sheet pan. Repeat with the remaining dough and scraps. Use a 1 1/2-inch heart-shaped cookie cutter and cut out a heart from the center of half of the cookies. Place them on the sheet pan as well or re-roll the dough to make more sandwich cookies.
Bake until cookies are lightly golden around edges, about 8 to 10 minutes. Transfer to a wire rack and cool completely.
Spread the whole cookie heart with some of the strawberry jam. Lightly dust the cut-out hearts with some of the powdered sugar. Place on top of the jam cookies and press lightly.
