Ingredients

  • Basic Muffin Recipe
  • 1 McIntosh apple, peeled, cored, and chopped fine
  • 1/4 tsp. cinnamon
  • 2 tsp. cold butter, chopped fine
  • 2 tbsp. packed brown sugar
  • 2 tbsp. flour
  • 1/2 cup oatmeal
  • 1/4 cup chopped walnuts

Supplies

  • 12-cup cupcake pan
  • 12 paper cupcake liners
Tip: Feel free to substitute pecans for the walnuts, or omit the nuts all together.

Directions

  1. Step 1

    Preheat the oven to 400°F. Line a 12-cup cupcake pan with paper liners.

  2. Step 2

    After mixing together the ingredients for the Basic Muffin Recipe, help kids stir in the chopped apple and the cinnamon.

  3. Step 3

    Kids can spoon the mixture into the prepared muffin pans.

  4. Step 4

    Combine the butter, flour, brown sugar, and oatmeal in a small bowl. With their fingertips, kids can gently toss and mix this mixture into fine crumbs. Add the nuts. Sprinkle this mixture on top of the muffins with your kids.

  5. Step 5

    Bake until golden and a toothpick inserted in center comes out clean, about 20 to 25 minutes. Transfer to a wire rack. Invert and cool completely.

Tip: It's easy to let kids help with this recipe from start to finish. You can measure out the ingredients, and let the kids add them to the mix.
