Ingredients

  • 4 large potatoes
  • 1 tsp. salt
  • 1/2 cup milk
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • 1 small onion, chopped fine
  • 2 cloves garlic, minced
  • 1 1/2 pounds ground turkey
  • 1/2 tsp. thyme leaves
  • Pepper
  • 2 tbsp. flour
  • 1 cup low sodium chicken broth
  • 1 cup frozen petite peas, thawed
  • 1 cup frozen corn, thawed
  • Paprika (optional)

Supplies

  • 4 small baking dishes or 2-cup ramekins
  • 1 sheet pan
  • 1 large plastic, resealable bag

Directions

  1. Step 1: Cook the potatoes

    Peel the potatoes and cut them into 2-inch pieces. Place the potatoes into a medium saucepan and add water to cover. Add 1 teaspoon salt to the water. Bring to a boil over medium high heat. Reduce heat and simmer until the potatoes are tender, about 20 to 25 minutes.

  2. Step 2: Mash the potatoes

    Drain the potatoes and return them to the hot saucepan. Mash the potatoes with a masher or a fork. Add the milk and the butter. Continue mashing until they are fairly smooth. Season with salt and pepper. Cover and set aside.

  3. Step 3: Prepare the turkey mixture

    Preheat the oven to 350°F. Add the oil to a large skillet and place over medium heat. Add the onion and garlic. Cook, stirring until the onions are translucent, about 3 minutes. Increase the heat to high. Add the turkey, breaking it up with the back of a spoon or a spatula, and cook until it is almost cooked through, about 4 to 5 minutes. Add the thyme and season to taste with salt and pepper. Sprinkle the top of the turkey mixture with the flour and cook for about 1 minute. Add the broth and bring to a boil. Simmer for about 2 minutes.

  4. Step 4: Fill the pies

    Place four 2-cup ramekins or small baking dishes on a sheet pan. Transfer the turkey mixture to the baking dishes, dividing it equally. Top with the peas and corn. Spoon the warm mashed potatoes into a large resealable bag. Snip a half-inch corner from the bag. Pipe a decorative topping onto each baking dish. You can get creative and make a different design on each one. Sprinkle the tops of the pies with paprika, if desired.

  5. Step 5: Bake the pies

    Place the sheet pan with the ramekins into the oven and bake until bubbly and the potatoes begin to brown, about 20 to 25 minutes. Makes 8 servings (2 servings per baking dish).
