Try this recipe at your child's next party. Double the ingredients or divide them in half, depending on the size of your celebration.

Ingredients

  • 2 large potatoes
  • 2 tbsp. grated onion
  • 1 tbsp. all purpose flour
  • Salt and pepper
  • 3 tbsp. vegetable oil
  • 2 tbsp. frozen peas
  • Thin slices of red pepper, about 1 1/2 inches long
  • Optional, serve with:
  • Low fat sour cream, or plain yogurt
  • Applesauce

Directions

  1. Step 1

    Peel two large potatoes then use a cheese grater to shred them. Squeeze out as much excess liquid from the grated potatoes as possible. The potatoes might oxidize or 'rust' in color, but that goes away once cooked. Place the grated potatoes in a medium bowl. Add the grated onion, flour and season with salt and pepper. Stir well.

  2. Step 2

    Heat 2 tablespoons of the oil in a large nonstick skillet over medium high heat. Shape 2 tablespoons of the grated potato mixture into small patties. Add the patties to the hot pan, about 1 inch apart. Flatten slightly. Press 2 peas as the 'eyes' and a red pepper slice as the 'smile' onto the patties to make a face.

  3. Step 3

    Cook the potatoes until golden brown, about 3 minutes per side. Carefully turn patties over and continue cooking until golden and potatoes are tender. Transfer the patties to a serving platter lined with paper towels.

  4. Step 4

    Add the remaining tablespoon of oil to the skillet and repeat with the remaining patties.

  5. Step 5

    Serve patties warm. You can also serve with a dollop each of sour cream and applesauce.
