Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 tbsp. red wine vinegar
  • 4 tbsp. olive oil
  • 1 small clove garlic, minced
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1/2 cup frozen corn, thawed
  • 1/2 cup halved cherry tomatoes
  • 3 green onions, sliced thin
  • Salt and freshly ground black pepper

Directions

  1. Step 1

    Combine the quinoa and water in a small sauce pan. Bring to a boil and simmer, covering until quinoa is tender, about 12 to 15 minutes. Spread the cooked quinoa on a cookie sheet in an even layer to cool quickly.

  2. Step 2

    Whisk together the vinegar and oil. Add the minced garlic, beans, corn, tomatoes, and green onion. Season to taste with the salt and pepper.

  3. Step 3

    Stir in the cooled quinoa and serve.
