Ingredients

  • Basic Pizza Dough
  • 2 cups ricotta cheese
  • 1 large egg
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup finely chopped cooked sausage or pepperoni
  • Salt and freshly ground pepper
  • Basic Tomato Sauce

Supplies

  • One or two cookie sheets
  • Aluminum foil
Tip: You can substitute all sorts of goodies in place of the sausage. Try cooked broccoli, spinach, cooked ground turkey, or any of your favorite pizza toppers.

Directions

  1. Step 1

    Preheat the oven to 400°F. Adjust the oven rack to the middle position. Line a sheet pan with foil.

  2. Step 2

    For the filling, kids can combine the ricotta cheese, egg, Parmesan cheese, and sausage in a medium bowl. Season with salt and pepper to taste.

  3. Step 3

    Separate the dough into 8 equal pieces. Roll or press each piece to a 5-in. circle on a lightly floured surface. Spoon about 1/4 cup filling onto one half of each dough disk. Cover filling by folding over the side of the dough to enclose. Seal the edge using the tines of a fork, pressing firmly. Transfer the pizzas to the prepared sheet pan. Continue with the remaining dough and filling.

  4. Step 4

    Bake the pizzas until golden and puffed, 10 to 15 minutes. Transfer to a wire rack and cool for several minutes before serving. Serve with warmed tomato sauce for dipping.

Tip: Although you will probably be able to fit one baking tray in the oven at a time, you may want to prepare a second tray with aluminum foil. This way you can work on the next few pizzas while the first few are cooking.
