Ingredients

  • 1 tbsp. butter, softened
  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 6 cups seasoned stuffing cubes
  • 1 cup chopped dried fruit (apples, apricots, dried cranberries and raisins)
  • 1/2 tsp. thyme leaves
  • 2 tbsp. chopped fresh parsley
  • 1 small rib celery, chopped
  • 2 cups low sodium chicken broth

Supplies

  • 1 1/2-quart casserole dish
  • Large Dutch oven

Directions

  1. Step 1.

    Preheat the oven to 350°F. Butter a 1 1/2-quart casserole dish and set aside. Add the olive oil to a large Dutch oven and place over medium heat. Add the onion and garlic. Cook, stirring often, until the onion softens and is translucent, about 3 to 4 minutes. Add the bread cubes, dried fruit, thyme and parsley. Toss to coat. Pour the chicken broth over the mixture and stir until evenly coated. Spoon the mixture into the prepared casserole.

  2. Step 2.

    Place the casserole in the oven and bake until the top is crisp and lightly toasted, about 20 to 30 minutes.

Tip: Makes a wonderful side dish to chicken, pork, or turkey.
