Here's a creative take on sushi: combine rice cereal, marshmallows, and fruit leather to make sushi the Umiriffic way!

Sprinkle a work surface with some of the granulated sugar. Press two like-colored spice drops together. Next, roll out the pressed spice drops to a 1 3/4-inch oval. Using a 1 1/2-inch number cookie cutter, cut out a number shape on each rolled out spice drop. Repeat with the remaining spice drops to make numbers 1-9.
Cut the fruit leather in half lengthwise into strips.
Place the marshmallows and butter in a medium microwaveable bowl. Microwave until the marshmallows and butter are melted and puffed, about 45 seconds. Mix until well blended. Add the rice cereal and stir until evenly coated with the marshmallow mixture.
Spray hands liberally with vegetable cooking spray. Shape the cereal mixture into nine 2-inch ovals, pressing firmly to hold together. Make a total of nine cereal ovals.
Using the photo as a guide, wrap the fruit leather around the base of each rice cereal oval, cut to fit, and secure with a dot of vanilla frosting. Repeat with the remaining ovals. Mix the remaining vanilla frosting with the coconut until well combined. Spoon 1 1/2 tablespoons of the frosting mixture into a small bowl and set aside. Spread the remaining frosting mixture on top of the cereal ovals. Place a spice drop number on top of each oval and arrange the "sushi" pieces on a tray.
For the "wasabi," tint the reserved coconut frosting with the green food coloring. Place on the tray alongside the sushi pieces. For the "pickled ginger," roll out the pink fruit chews to 1/16-inch thickness. Add to the serving dish. In a small bowl or ramekin, squeeze about a 1/4 cup of chocolate syrup as the "soy sauce."
