Servings: 8

Prep Time: 30 min.

Ingredients

  • 3 large eggs, separated
  • 1/2 cup sugar, divided
  • 1 cup orange juice
  • 1/2 cup sweetened flaked coconut
  • 1 cups finely diced pineapple
  • 1 can (11 oz.) mandarin oranges, drained
  • 2 medium bananas, peeled and diced
  • 1 cup whipped cream topping
  • 8 maraschino cherries

Directions

  1. Step 1

Place the egg yolks and 1/4 cup of the sugar in a medium metal bowl and whisk until well blended. Place the bowl over a small pot of simmering water. Whisk the egg yolks and sugar until thick and yellow and the temperature reaches 140°F.

  2. Step 2

Remove the bowl from the simmering water and whisk in the orange juice until smooth. Your child can help add the chopped fruit. Then, stir well.

  3. Step 3

Meanwhile in a clean bowl, beat the egg whites to soft peaks. Gradually add the remaining 1/4 cup of sugar until the egg whites are glossy. Fold the egg whites into the fruit mixture, 1/3 at a time, until just blended.

  4. Step 4

Spoon the mixture into eight 1-cup dessert bowls and place into the freezer. Let freeze until set, at least 2 hours or overnight.

  5. Step 5

Just before serving, remove the whips from the freezer and top with a dollop of whipped topping. Have your child top each with a maraschino cherry.
