Ingredients

  • 4 tsp. red wine vinegar
  • 3 tbsp. olive oil
  • 2 tbsp. chopped fresh dill
  • 1 tsp. fresh lemon zest
  • Salt and pepper
  • 4 cups cooked whole wheat pasta fusilli (curls)
  • 1 cup diced red pepper
  • 1/2 cup diced carrots
  • 1/2 cup chopped celery
  • 1/2 cup frozen peas, thawed
  • 1/4 cup chopped red onion

Directions

  1. Step 1: Make the dressing

    Whisk together the vinegar and oil. Add the dill and lemon peel and season to taste with salt and pepper. Makes about 1/4 cup dressing. Refrigerate until ready to use.

  2. Step 2: Make the salad

    Combine the pasta, red pepper, carrots, celery and onions in a large bowl. Add the dressing and toss well. Season to taste with salt and pepper. Makes about 6 cups; 1/2 cup per serving.
