Ingredients

  • 1 tbsp. vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup each chopped green and orange bell pepper
  • 1/2 cup diced low sodium ham
  • 5 large eggs
  • 2 tbsp. milk
  • 2 green onions, sliced thin
  • Salt and pepper

Directions

  1. Step 1

    Heat the oil in a small 8-inch nonstick skillet pan over medium heat. Add the onion and peppers and cook until just tender, about 5 minutes. Add the ham and stir to combine.

  2. Step 2

    Beat the eggs and the milk together in a medium bowl until well blended. Add the onions and 1/4 teaspoon salt and a pinch of pepper. Pour the egg mixture over the vegetables in the skillet and return to low heat and cook, covered, until the eggs are set, about 10 minutes.

  3. Step 3

    Invert the frittata onto a cutting board and cut into small wedges. Serve warm or at room temperature.
