Preheat oven to 350°F. Line a cookie sheet with foil. Unroll the pie dough onto a clean work surface. Roll out lightly with a rolling pin to make flat. Use the templates to cut out sail, circle and "W" with a small knife. Transfer to the prepared cookie sheet. Discard scraps.
Using a pastry brush, brush the top of the sail with the beaten egg. Sprinkle with the yellow sugar. Brush the other small pieces with the egg. Sprinkle the "W" with the red sugar and the circle with the purple sugar. Bake in the oven until golden brown, 7 to 10 minutes. Transfer to a wire rack and cool completely.
Pipe a decorative edge of purple frosting along the straight edge of the sail. Add the smaller pieces to the sail using a dot of frosting to secure.
Place the pie topper on top of desired pie.
